Evergreen Delight  - JCL No. 1031

Designated for enjoying the moment when tasks are completed, and a deep breath of relief and calmness is followed.

Originally a very lightly oxidized Four Season Spring (Evergreen) - 
SiChiChun 2012 Summer crop from Nantou County, Taiwan.



Signature baking recipe designed by Dr. Jerry Liu.

After initial cupping of this original tea, a program was designated to enhance the flavors and bring out a more floral (orchid) and sweet fruity flavor.  Success.

Crop: 2014 Autumn, Machinery Harvest.
          Sifted to have evenly size semi-ball,
          and tumbled with gunpowder roller.
       

Cultivar: Chinsing Oolong

Oxidation: 15-18%
Rolling: semi-ball wrapped rolling
Baking:  High-fire baked for 26 hours.





Harmony code:  3g / 5 oz/ 210F / 3 min for the Hot tea service.
Can be infused the second time with 1' steeping.

Estate:  Lishan, Taichung, Taiwan
 
Altitude: 2400 Meters

Crop: Spring 2014
Cultivar:  Chinsing Oolong
Oxidation: 10%-12%
Rolling: Canvas Wrapped Rolling
Baking: Lightly baked.
Baked by Thomas Shu in Baldwin Park, California on 7/18/2013.
With the Pilot Baking Unit Model #TTI-A1
Total 9-1/2 hours with light-fire baking.

Leaf Style: Semi-Ball rolled with few stems.  (*we did additional picking on those stalks)
                   
Aroma: Clean and Orchid floral aroma
Flavor: Slightly sweet with complex flavors, smooth and silky.
              Great lingering finish.
Liquor: Golden green-yellow, Bright clear.

Second infusion can cut down to 1 min.
On the third infusion, have a long steeping and pour over ice
to make freshly brew Gourmet Iced Oolong Tea.
