Cultivar:  Chinsing Oolong
Oxidation: 20%
Rolling: Canvas Wrapped Rolling, tightly
Baking: Mid-fire baked
Leaf Style: Semi-Ball rolled with few or no stems
Aroma: Floral and a bit nutty and stone-fruit fragrance
Flavor: Richly honey sweet note and slightly toasty.    Very smooth and lingering finish
Liquor: Golden Amber

Harmony Code: 3g/5oz pot/205F/4'  for the first infusion.
Second infusion can cut down to 1-1/2 min.
After the second infusion, have a long steeping and pour over ice
to make freshly brew Gourmet Oolong Iced Tea.

WCS 2016 - Taiwan's First Female President !



Taiwan elected its First Female President on 1/16/2016.
"Wisdom, Courage, and Strength" a prayer for people in Taiwan.  The people of Taiwan have made their choice and made history!

Here is the commemorative tea that will be dedicated to this BIG landmark direction of Taiwan's  pursuit of Democracy.

Amber Oolong, the Buddha's Palm
Signature baked by Dr. Jerry Liu and Ambassador Thomas Shu, on 1/15 - 1/16/2016 at 14520 Arrow Hwy, Baldwin Park, California.  We both felt this Buddha's Palm cultivar, 2015 Spring Crop from Wenshan tea district is a good choice for this project.  Our baking program is 18 hour mid-high fire
baking.
Net 4 oz each packed in wax paper and stored in air-tight/wax-sealed porcelain tea canister.
Limited edition.  Total 60 caddies.

 




This tea is excellent to be served in a classic tea ceremony, or to be enjoyed for any occasion.
In addition, this is a great choice to be infused properly and bottled to serve at room temperature, or chilled.  Perfect for parties and celebrations!

Aroma: Roasted rice sweetness
Flavor: Floral and fruity, very complex and round/smooth.
Liquor: Bright clear gold color

Harmony Code: 1 bag per 6 oz - 8 oz of water, steeped for 2 minutes with 210F.
Second infusion can cut down to 1 min.

Drink it pure.
Food Pairing:  Red Meats or Seafood.

Rolling: Pan Rolling and Canvas Wrapped Rolling
Baking: Lightly baked
Sifted to teabag cut (14-40 mesh)

Aroma: Pure and clean fragrance of ripe peaches and apricots
Flavor: Naturally sweet, fresh, "honeyed" ripe fruits.
Liquor: Bright clear, orange-amber color

Harmony Code: 1 bag per 6 oz water, steeped for 2 minutes with 210F.
Second infusion can cut down to 1 min.

Drink plain, or add Honey or Milk as desire.
Add a dash of Brandy to make a very nice tea cocktail.
Food Pairing:  Red Meats or anything you like to try with.

Created for Vintage Oolong for tea to be enjoyed for years to come.  With a trace stringent with complexity that compliments the toasty floral and ripe fruit flavors. 
Used a recipe for Classic Tung Ting High-Fire baking regiment.


Originally relatively mid-oxidized Jade Oolong, but was dried without baking.  A semi-balled rolled leaf lightly withered (15%), from Nantou, Taiwan, Spring 2015 crop.
